Pastasciutta presents a charming, homely atmosphere, carefully designed with keen attention to detail. This Roman establishment truly stands out with its open production laboratory, allowing guests to observe fresh pasta being crafted daily and chefs preparing dishes right before their eyes, offering a unique glimpse into Italian artisan tradition. Often found in prime locations, such as a cosy spot near St. Peter's or directly opposite Piazza del Popolo, these venues embody simplicity and tradition, providing an authentic Roman experience.
The restaurant specialises in fresh, handmade pasta, prepared each morning using only selected durum wheat, quality flour, fresh Italian eggs, water, and salt. Guests can enjoy classic Roman pasta dishes like Spaghetti alla Carbonara, Rigatoni Cacio & Pepe, and Pappardelle al Ragù, alongside daily specials inspired by seasonal ingredients and the chef's creativity. A significant highlight is the remarkably quick service, with delicious pasta dishes typically ready in just two to three minutes due to the short cooking time of fresh pasta. Vegan options, such as pasta with tomato sauce, are also available.

We had a bowl of pesto and carbonara that cost 8 euros each. There's a lot of people waiting but outside but their service is fresh and fast. The flavor and taste is delicious and we ate at the curbside. They had 6 types of pasta order and really straightforward. We visited this one near Vatican.
You don't get to pick or change the pasta for each menu but it's okay. We really loved the truffle pasta!
The line can get really long so recommend to come early or not during rush hours.
But honestly, we didn’t regret coming here because the pastas were really delicious. We had the truffle pasta and the ragu and they were both so flavorful. The serving size is also enough to fill you up.
