RIPIENA di Max Crunch pizza romana offers a contemporary take on Rome's cherished stuffed 'pizza alla pala', located in the vibrant Ostiense/San Paolo district, a short walk from Roma Tre University. This unique eatery, helmed by the renowned pizzaiolo and Youtuber Massimiliano Ceccarelli, affectionately known as Max Crunch, distinguishes itself with a modern yet essential design, reminiscent of classic pizzerias. Its inviting interior features a striking angular counter and a luminous menu blackboard against white brick, setting the stage for an authentic urban culinary experience centred on its signature super crunchy pizza base.
The culinary focus here is firmly on the traditional Roman white pizza, expertly stuffed after being baked to ensure its characteristic lightness and crispness. Patrons can delight in a diverse array of fillings, from the classic 'Mortazza' and succulent Porchetta to inventive combinations such as chicken salad and a much-praised homemade mayonnaise. A standout offering is the 'Pizza da 10', a special creation featuring crabmeat, salad, and mayonnaise, paying homage to the famed 'Gianni al Mattone'. All pizzas are sold by weight, encouraging exploration of various delectable options.
This establishment is ideally suited for those with a keen appreciation for authentic Roman street food, particularly enthusiasts of high-quality, flavourful pizza. The convenient takeaway format makes it perfect for a casual lunch to enjoy while exploring the neighbourhood, or for a relaxed meal in a nearby park. With flexible combo menus and options for both half and whole 'pala' pizzas, it provides a superb choice for sharing among friends or for a satisfying individual treat in a lively part of Rome.

Very fresh, and they make their own mayonnaise!! The staff is friendly; you can even sit down and start eating a pizza while waiting for the others to come out, leaving the "bill open." It's devilish because you'd literally never stop!
If you have time, I recommend trying the freshly baked ones because they're incredibly crispy.
The price is €20/kg, and I think it's worth it.
It would be great if they added something with 'nduja to the menu, because in my opinion it would be really delicious on such a crunchy dough.
