Collegio Bistrot offers a distinctive Roman dining experience within the historic Palazzo Capranica, a charming upscale eatery restored from a 1930s winery. The venue's ambiance beautifully preserves its original 1930s heritage, featuring impressive 18th-century arches, soaring vaulted ceilings, and walls adorned with an extensive selection of wines. This central Rome establishment, a member of the prestigious "Association of Historic Shops of Excellence," creates a warm and romantic atmosphere with its oak tabletops, soft leather seating, and antique-inspired decor.

The cuisine at Collegio Bistrot is a celebration of Italian tradition, drawing inspiration from the rich culinary heritage of both Rome and Amatrice. Guests can savour expertly prepared dishes using top-quality ingredients, with highlights including classic Roman pasta such as Amatriciana, Carbonara, Gricia, and Cacio e Pepe. The well-curated menu also features unique items like truffle beef carpaccio and pigs cheek ravioli, alongside a formidable selection of traditional desserts. An elegant bar complements the dining experience, offering signature cocktails and a fine array of Italian wines, many from the Santarelli family's own Casale del Giglio winery.

Its inviting setting, including an outdoor terrace, provides a perfect backdrop for enjoying a meal in comfort. I was fortunate enough to have a 1-on-1 cooking class with Nonna, and it was an unforgettable experience! I learned things about pasta that I never would have even thought to ask. The food was delicious, and I can’t wait to make more pasta with Nonna next time I visit!

Don't miss this! The class was wonderful, the Nonnas (we had two) were fantastic, and the interpreter was marvelous. We learned to make pasta, learned about Italian culture, and had a great meal with nice wine.

Outstanding, complete hands on experience! Nona Margherita and Aurora were so much fun and very detailed in their explanations including the history/traditions of making pasta. Upon arrival Nonna and Aurora greeted us with a big warm hug. We started our experience with an opening appetizer with a fresh delicious white wine made from the restaurant’s own vineyard. Two in house extra virgin olive oils were served with our appetizer…..a specialty oil directly from Nona Margherita’s olive vineyard and one from the restaurant’s own olive vineyard.

The pasta lesson was delivered with exceptional organization, quality and atmosphere . Each student got their own set up with all the necessary equipment…flour, egg, cutting board, pasta machine, apron and Aurora was an amazing translator throughout the lesson.

We were then able to enjoy the final 2 dishes.(.fettuccini with traditional sauce and stuffed ricotta spinach ravioli ) with nona Margherita and Aurora. Dinner conversation was wonderful!!

Thank you Nona Margherita and Aurora for this exceptional experience. I will be purchasing my pasta board as soon as I get back home.
