I want to compliment the entire staff at this welcoming establishment, from chef Maurizio for his authentic yet refined cuisine, his attention to the finest ingredients, and his excellent vegetarian options; to waitress Sara, whose service is impeccable; and to the very kind Lucia, who is attentive to your needs and takes great care of your relationships.
I highly recommend this delightful establishment.
Special mention goes to the panzanella and cavatelli with zucchini, simply exquisite.

SILOS in Rome (Via Martino V 16/18) presents itself as one of those places trying to make a difference in a city where a €35 tasting menu usually means either frozen food or sad aperitivo portions. Here, however, there's a serious, seasonal offering with a clear natural/artisanal focus, and it's not just Instagram marketing.
1. Identity and positioning: It's a modern bistro with ambitions for sincere cuisine, expressed through a natural approach (wines first and foremost, but also a focus on ingredients). It appeals to a young audience, but not necessarily extreme hipsters: people who want to eat well without spending €90-120 a head, who appreciate seasonality without star-chef-esque claims, and who aren't afraid of a casual yet refined atmosphere. There's real substance at a price that's considered miraculous in the area (and beyond), but it's not a place for "big stuff" or creative exhibitionism. Is it trendy? Partly, yes, for the natural wine and the minimalist aesthetic. Substance? Definitely, yes, especially when it comes to value for money.
2. Atmosphere and ambiance: The open kitchen warms the space (literally and metaphorically), comfortable sofas invite you to linger, and warm lighting that's not romantic enough for a candlelight dinner. It's not excessively noisy despite the open kitchen, but it's not a Zen oasis either: there's life, people talking, laughing. The comfort is real: you can sit comfortably for two or three hours without feeling the backache from a stool or a wobbly table. The aesthetic is clean, essential, and meticulously maintained, but without overdoing it with exposed light bulbs or faux-industrial exposed brickwork. It works.
3. Cuisine analysis: The €35 tasting menu (three appetizers, two first courses, a second course, and dessert) is the heart of the offering and the main reason why SILOS deserves attention. Seasonality is respected without ideological pressure, and the raw materials are clearly above average for such a low price: you can taste the research, not the minimal expense.
Impressive signature dishes: the marrow, for example, is a classic that here becomes succulent, rich but not greasy, with that deep flavor that only good ingredients and precise cooking can provide. Clean technique, no unnecessary tricks.
The appetizers are balanced: well-measured acidity, controlled fats, fresh herbs without overdoing it. The first courses hold their own with textures and seasonings—no drowned sauces or overcooked pasta. The second course arrives with character, without overdoing the quantity. The dessert rounds out without being cloying.
The balance of flavors is very good for the price. The menu is coherent, and you don't get the impression of randomly thrown together dishes. The creativity is just right: it's not an exercise in style for its own sake, but it's not recycled grandmother's cooking either. It's a contemporary approach to Italian tradition, with natural touches and no posturing.
4. Final verdict: At €35 for such a comprehensive menu (seven courses + bread/water, I presume, included, or almost included), it's objectively one of the best value Rome has to offer right now. Bottom line: it's a bargain. Ordering one or two dishes à la carte probably doesn't do justice to either the restaurant or your palate: the menu is meant to be enjoyed in its entirety.

I recommend it a thousand times over. Exceptional service, extraordinary cuisine. Honestly, everything was perfect. The homemade pasta, a delight. The dessert, the homemade cake. I don't think I've ever had such good pasta or eaten so well in a restaurant. Seriously, don't hesitate, go.

A small, well-kept restaurant (the small outdoor space is delightful in the summer). The menu offers simple, appealing options. The hummus with friggitelli peppers and balsamic vinegar and the galletto (with an excellent mix of spices and a spicy note) are particularly popular.

A true gem in the neighborhood—I can't recommend it highly enough. Traditional cuisine, thoughtfully modernized. I've been several times since it opened a year ago, and it never disappoints. A perfect blend of refinement/experimentation and classicism.
From the bread basket (incredible!!) to the desserts, every dish is a balanced explosion of flavors. Refined and fresh ingredients.
Friendly, attentive, and warm service. Highly recommended, worth the trip from anywhere in Rome.
