The owner opened up about 2 months ago after l working in food his whole life. He has undoubtedly put his heart into this place. He welcomed us with big smiles and a hospitable nature. We were hot and tired after walking around Rome, and he immediately put us at ease.
The food is out of this world. He brought us a complimentary appetizer that appeared simple but had extraordinary flavor. We ordered the Shitake and the Guinea Fowl and were blown away at the simple complexity of the flavors and textures. The crust almost tastes lightly fried, with a crunch that softens with each bite and nearly melts in your mouth. The chosen toppings complement each other in a beautiful way, while each managing to stand out from the other.
Conso is nearly hidden among a long stretch of other restaurants and cafes, but it certainly stands out as the best of them all.
(They also kindly offer half-sized portions of pasta,You can enjoy more dishes!)
We went for a Pizza each. I opted for La Pepperoni, my wife decided on the Veggie. I had a Pedavena beer with mine, she had a soft drink. The prices were quite reasonable.
I tried a little of hers and it wasn't great, mine was ok. We were hungry enough to finish it all, but I wouldn't say the food is anywhere near as spectacular as everyone else makes out.
