Details

Ristorante Pancrazio, established in 1922, offers a dining experience deeply rooted in Roman history, as it stands on the ruins of the ancient Theatre of Pompey, near Campo de' Fiori. Guests can dine amidst genuine archaeological remains, with some rooms set within the restored arcades of the 1st-century BC theatre, where Julius Caesar was famously assassinated. The interior blends an elegant 18th-century salon with an atmospheric vaulted cellar, featuring elements such as wood-beam ceilings and brick arches, creating a unique historical ambiance.

The culinary focus at Pancrazio is on traditional Roman cuisine, featuring hearty dishes prepared from ancient recipes passed down through four generations since 1922. Diners can savour classic Roman fare, including popular choices such as spaghetti alla Carbonara and Cacio e Pepe, alongside Saltimbocca alla Romana and oven-roasted lamb with potatoes, known as abbacchio al forno con patate. Fresh, seasonal ingredients are central to the authentic flavours served.

This historic restaurant proves ideal for those seeking a truly immersive Roman experience, appealing particularly to history enthusiasts and food connoisseurs. With its blend of refined dining spaces and archaeological wonder, it creates a memorable setting for a romantic dinner, a lively gathering with friends, or indeed a special group occasion. Engaging cooking classes are also offered, allowing visitors to learn to prepare typical Italian dishes.

The guys are fantastic: kind and helpful, creating a youthful atmosphere and providing professional service. I'm in love with the potato pizza. The bread is baked daily and is incredibly fresh. And then the perfect coffee ✨

A pleasant local discovery!!
The staff is very kind.
The pizza is very good, I've already ordered it several times! They also stock very unique baked goods, delicious.
The only place in the area that, in addition to being an excellent bakery and pizzeria, is also a great dessert bar! We'll definitely be back.
Highly recommended.

Forno Pancrazio: The Art of Pizza by the Slice Elevated to a Masterpiece - An Unmissable Gastronomic Experience
If you're looking for the best pizza by the slice in the area, your search ends here. Forno Pancrazio isn't just a pizzeria, but a true temple dedicated to the art of baking, where tradition and innovation meet to offer a final product that to call excellent would be an understatement. As a street food and leavened product enthusiast, I can confidently say that this is a must-visit for anyone who wants to rediscover the authentic taste of pizza.
πŸ• The Dough: A Crispy and Digestible Cloud
The real secret of Forno Pancrazio lies in the base. Forget chewy or heavy pizzas; here we are dealing with a perfectly natural leavening process.
β€’ Structure: The dough has perfect air pockets, a sign of high hydration and a long maturation period (probably over 48/72 hours).
β€’ Texture: When you bite into it, the pizza offers that magical contrast everyone seeks: crunchy and crispy on the base, yet incredibly soft and light on the inside.
β€’ Digestibility: Thanks to the use of select flours (likely stone-ground or semi-whole wheat) and sourdough starter, the pizza is incredibly light. You could eat entire trays of it without ever feeling heavy.
πŸ… Gourmet Ingredients and Ingenious Pairings
Beyond the impeccable dough technique, what sets Forno Pancrazio apart from the competition is the obsessive quality of the raw materials. You won't find cheap ingredients, but rather fresh, seasonal, and often locally sourced products or those with DOP/IGP certifications.
β€’ The Classics: The Margherita is a celebration of simplicity: sun-kissed tomatoes, perfectly stringy fior di latte mozzarella, and fragrant basil. The Rossa, simple and straightforward, showcases the quality of the extra virgin olive oil used.
β€’ The Specials: The counter is a triumph of color. I tried a version with pumpkin, crispy bacon, and pecorino cheese, which was the perfect balance of sweetness and savory. Even the vegetarian options are carefully craftedβ€”not just fillers, but the true stars of the flavor.
πŸͺ Atmosphere, Service, and Cleanliness
The customer experience is meticulously crafted.
β€’ The Venue: As soon as you walk in, you're enveloped by the intoxicating aroma of freshly baked bread. The atmosphere is modern yet welcoming, with both the counter and the dining room impeccably clean.
β€’ The Staff: The staff are the heart of the place. Smiling, fast (essential for a lunch break), and, above all, passionate. They're ready to explain the ingredients of each individual pan, conveying their love for their work.
β€’ Value for Money: Considering the high-quality ingredients and artisanal craftsmanship, the prices are absolutely fair and competitive.
