It was my first time trying poke, but I was relieved when the owner, a fan of international cuisine, recommended combinations for my ingredients.
I chose black rice for the base rice. White rice is also available.
For the medium size, you can choose two types of protein.
I had already decided on raw tuna, but after asking for recommendations, I decided on boiled shrimp.
You can choose from whole vegetables such as edamame, cucumber, corn, avocado, and mango, or you can choose from the owner's homemade ingredients such as marinated onions and vinegared cucumber.
I had onion crunch on top, but toppings such as nuts and poppy seeds are also available.
The sauces available included poke sauce, soy sauce, ponzu, and wasabi-flavored sauce, and I had a little bit of each.
It must be a lot of work to prepare such a variety of dishes, but I could tell they were using their experience and cooking with pride.
It wasn't a mechanical style like chain restaurants, but rather a conversational one, with the staff explaining what each ingredient was and allowing me to create my own original poke, which was fascinating.
When I ate it, I tried different combinations and took one bite at a time, which created a variety of harmonies that made it delicious and enjoyable.
More than anything, I was very happy that they were so friendly, even though I came alone as a foreigner. We ended up chatting for about an hour...I'm sorry for interrupting their work.
This time, I ordered takeout due to time constraints, but you can also eat in the restaurant.
It's been two years since it opened, and together with the owner's mother, I hope that this restaurant will continue to prosper for many years to come.
