It's often said that you come in as a customer and leave as a friend... well, that's not always the case, but here... I assure you, it's exactly that. Tiziana and Fabio make you feel like old friends. And then... the food is excellent and the price is right. They bend over backwards to please you, and they succeed perfectly! I was undecided whether to give a good review or not because there's only a limited number of seats (about 20) and I wouldn't want to miss out on a table when I book... but alas, I feel compelled to praise their work. Fantastic guys!

Welcoming location, pleasant background music.
Delicious platters and bruschetta of great variety and quality.
Wide selection of quality wines.
Tiziana's carbonara was a pleasant surprise, and what can I say about the carbocrema!!!
We'll definitely be back and recommend it to everyone.

Platter with all the special cured meats and cheeses and all presented to savor with awareness 😄, if it's true that tasting new flavors brings good luck, the platter is perfect, not to mention the focaccia bruschetta with porchetta etc. and 2 light tagliolini delicate with fresh truffle. Don't you want to try them? 😂 Highly recommended... everything is excellent. There is no problem with parking 😉

I've known Fabio, Tiziana, and Mr. Aldo since their delicatessen was still a CONAD supermarket. Even then, it stood out for the quality and attention to detail of its products, but today, with the renovated bistro, they've transformed that passion into a true taste experience.

Every dish tells a story: from the Roman-style tripe, which exudes tradition, to the nachos with truffle guacamole, which surprise with their balance and creativity. The platters are a journey through authentic flavors—with unique cheeses like red apple and whiskey cheese or casu sardu, and top-quality cured meats like Sella di San Venanzo or cave-aged speck. The meat is always tender and cooked to perfection.

The atmosphere is welcoming, the service familiar and genuine.
It's not just a place for an aperitivo or aperitif, but also the ideal venue for a complete dinner, carefully prepared and full of surprises.

A place where tradition and innovation meet, and where every bite tells the story of those who truly love food.

Last night, November 7, 2025, we returned for a family dinner.
I wanted to add that at the Vergari Bistro, in addition to fantastic aperitifs, you can also have lunch or dinner, and what you'll find is on par with even the most prestigious restaurants. Indeed, the ingredients are excellent, the dishes are carefully prepared, and the atmosphere is unique. I tasted the final cut of beef with my hands, enjoying every single bite, tender and juicy. I think the photos I've added speak for themselves.
This time, we tried the Negramaro from the same winery....excellent.
